Types of Fats & Their Profile

Fats in foods are a mixture of all three kinds of fatty acids -- saturated, monounsaturated, and polyunsaturated. The fatty acid profiles of different fats and oils are shown in the chart below.



Research on Oil Compositions

Sixty-six samples of NuSun seed were collected from the major geographical areas in the United States where the crop is grown and included the states of Colorado, Kansas, Minnesota, Nebraska, North Dakota, Oklahoma, South Dakota and Texas. Crude oils were analyzed for fatty acid composition; relative density, refractive index, saponification value and unsaponifiable matter; plant sterols; and tocopherol content. Iodine values were calculated from fatty acid compositions. Click on the file name below to read the findings from this research conducted by Dr. Kathleen Warner.
