Crunchy Sunflower Kernel Fruit Cookies

1/3 cup dried apricots, chopped 1/2 cup raisins, chopped 3 Tbsp. rum or apple juice 1/2 cup sunflower margarine 1 egg 3/4 cup brown sugar, packed 1/2 cup sugar Pinch of salt 1 1/2 cup flour 1/2 tsp. baking powder 1 1/2 cup rolled oats 1/3 cup sunflower kernel, raw or roasted

Preheat oven to 375ºF.
Soak dried apricots and raisins in apple juice or rum. Cream margarine in mixer; add egg, sugars, and salt; cream until fluffy. Add flour, baking powder, and oats; mix until blended. Mix in sunflower kernel, apricots, and raisins (do not drain). Spray baking sheet lightly with nonstick spray; place rounded teaspoons of cookie dough onto baking sheet. Sprinkle tops of cookies with additional sunflower kernel. Bake 10 minutes, until cookies melt and are light brown in color.
